How do I set Simple Link colors in the SW Header Simple top bar?

These settings affect only Simple Links in the top bar. With Override Link Colors off, the links use Top Bar Text Color and the theme's hover color for dark backgrounds. Turn the override on to set the resting link color with the color control inside XL Simple Link Font and the hover color with Link Hover / Active Color. Choose colors with clear contrast, and do not use Menu Colors for top-bar Simple Links.
